You might think of dandelions as pesky weeds, but to some people, these bright yellow flowers meant so much more. Early settlers in North America brought dandelions with them from Europe. They also introduced plants like water lettuce and fennel to North America. The settlers grew dandelions in their gardens, using the roots to brew tea and make medicine. They used dandelions as food, too, eating the leaves, flowers and roots. Next time you see a dandelion growing on the pavement, remember how useful it has been throughout history.
